This is Lacey :D I'm sorry to do this but I have to raise prices a little bit. I just have to make it worth it for me to do this so I hope everyone is okay with the new prices! So here is a list (again) of everything that is available.

Lacey Duke has taken over the bread portion of co-op. Thanks Lacey! I'm sure most of us are super excited about bread being available again. She is ordering from Gregory's Wheat Shop in Bountiful. It's where we first started getting our bread from.

Feedback.

I'm hoping you are all well and happy with co-op. I have to admit myself that last week's basket was disappointing with the terribly rotten blueberries. When I ordered them he said that they should probably be eaten fast. I always know that some of them might look a little off. I did not expect all of them to look so terrible. The money that was charged to buy those has been refunded and will go toward next week's basket. Would you all still like to stay heavy on fruit? We have someone who is interested in taking over bread for our co-op and neighbors. She is in the thinking process of it now. It would be separate from the co-op, and you'd pick it up and pay her. The bread would go back to Gregory's.

Today's produce.

Today's produce included: Bananas, apples, peaches, nectarines, blackberries, blueberries, oranges, peas, tomatoes, broccoli, red leaf lettuce, celery, strawberries. SIDENOTE: Blueberries are ready to go. There are some moldy ones in there, so wash them out really good and throw away the bad. We did get a credit back on them because they really weren't fantastic. ;o)

Produce Ordered.

Vegetables have gone up in price. I was hoping to get some Avocado this time around since they are about $1.99 per avocado at the store, but they are still a bit pricey through Quality Produce as well. I know people either like mushrooms or hate them. I bought them because of price. If you hate them please feel free to trade with those around you or in the extra's box. I did my best with ordering. I haven't put the voting up and I'm sorry. This co-op has been a little stressful and now it is calm and regular that I forget to do the basics of it by putting the voting up.

Produce is ordered.

Produce is ordered: 16 ITEMS!!!! Strawberries, bananas, granny apples, oranges, mangos, kiwi, pears, roma tomatoes, carrots, cucumbers, broccoli, italian squash, yellow squash, mushrooms, red leaf lettuce, onions!

Details:
Only one mango per basket. Prices were fantastic on the items I got. I chose red leaf over other lettuce because it was cheaper. Onions are always cheap: $11.00 for 50 lbs.

We will see you tomorrow. When you get your text please come and help sort and clean up as it's getting slim with help lately. Also, when the weather decides to start warming up we will need to reorganize the way pick-up is handled. You will need to arrange someone to pick up your basket as soon as it's sorted. Food that is left will begin to rot and wilt from the heat.

Produce is ordered.

I'm such a person of habit, so ordering new items is sometimes difficult. As requested I only ordered one box of apples instead of 2. They didn't have any strawberries. :(
Red Bell and Gold Bell were much more expensive, so I just got the Green Bell Peppers. This is an interesting basket...

One day to vote!!

You have one day to vote, so make sure you do so!
Last week Breanna was able to get strawberries for .69/lbs. WOW!!! If we get get them for that price then I will probably order everyone 2 lbs. and then extra for those who would like to buy extra to make jam or just to snack on during the week. If I do buy extra it will be first come first serve. I won't hold on to any unless you put a special order in with me before I order at 8:00 tomorrow morning. ;o)

Voting is such a great thing to have, but pricing changes from day to day and that is what persuades my ordering in the end. I try really hard to get the things voted for. Please keep voting so I can know what is desired. ;o)

Produce is ordered!

FIRST, I want to say I'm so sorry for not having the voting up this time around. Life has been really busy and co-op was the last on my priority list. I will do so much better next time! I tried to order more basic items this time around. I'm looking forward to seeing you tomorrow.  We will be getting more than 3 bananas this time, and more oranges. Oranges are so cheap right now. They are $13.00 for a box! That's GREAT! Mangos were probably the most expensive per fruit item that we purchased. $6.50 for 6. I know it's a bit much. When I ordered I was thinking they were $6.50 for 12.

FYI. If any of you want to make a special order of a box of anything you can. Just let me know what the max of something you are willing to pay for and I'll wait until it hits that price or below, and when it does I will order it for you.

PIES

So, Catherine from the Woods Cross co-op has been working out the details about pies. Since all of the co-ops who will be ordering pies will be ordering the same time I need to see who is all interested in ordering pies so we can determine which week to order them. If we have more interest in our week of co-op then we will order them our week. If there is more interest in the other co-op's on the odd Wednesday of us, then we will order them that week. I need to know who is interested. Leave a comment or email me so I know. Thanks!

DETAILS:
  • All pies are $2.75
  • Pies come frozen. (If you buy pies then you've seen these pies)
  • I can't say where we are getting the pies from because we are getting them at a lower price than grocery stores.
  • Depending on what week we order them we will know if we get Cream Pies, or Fruit Pies. It will be different from week to week. It all depends on what the bakery is making that day/week.
  • ANYONE can order pies. You do not have to be in the co-op.
  • Fruit Pies include: Cherry, Apple, Pineapple upside down, Dazzleberry, Blueberry, Strawberry - Rhubarb, Peach
  • Cream Pies include: Chocolate, Coconut, Lemon, Banana, Key Lime
  • Meringues include: Lemon, Coconut, Key Lime, Chocolate.

Produce is ordered.

Produce is ordered: Bananas, Galas, Pineapple, Strawberries, Pears, Grapes, Fat Oranges, Asparagus, Spinach, Celery, Mushrooms, Yellow Squash.

I tried to stay as true to the voting as possible. Prices are slowly starting to lower back to what they were when we started co-op. I know it doesn't look like a lot of produce as compared to what we first got when we started this up, but the traditional Cauliflower (1 box = $13.50) and broccoli (1 box = $13.50) that we'd always get were always such great prices. Spinach, pears, and asparagus are a little pricey. Pears = $30.50, Asparagus = $41.00, Spinach = $22.50. When we'd order green leaf or red leaf lettuce the price is about $12.50. So you can see why I'd always order items that were lower. I haven't got much feedback as to what you all prefer, so I will stick to the voting as closely as possible. If you aren't happy with your baskets then please remember to vote for next time!

Prices for donuts & more information.

ALSO, a local bakery (I can't say who, because they will be selling us their items cheaper than they sell them to the grocery stores) have agreed to sell us their pies for $2.75 each! AWESOME RECIPE FROM NATALIE WARNER!

This recipe is SO GOOD!!!  Natalie Warner made this for me and it is sooooo good! I just use regular oil. and turkey sausage. The Kale is DELICIOUS in this recipe.

Anyone have any really great ideas for the artichoke? It is a little frost bitten, okay a lot! I called this morning and complained and he said that it actually adds flavor. I need your feedback because if it is NO good then he will give us a refund and we can add it to the next order. Thanks!


Breakfast for Champions 
Karen Falbo, CN 
2 Tablespoons coconut oil or ghee (clarified butter) 
2 medium-size red skin potatoes, peeled and chopped 
¼ cup chopped onion 
¼-1/2 cup chopped red or green bell pepper 
1 teaspoon brown or yellow mustard seeds 
2-4 links organic turkey or chicken sausage, cut into round slices 
4 large leaves of Kale, or chard (red or green), washed, de-stemmed, and chopped 
2 garlic cloves, minced 
½ teaspoon ground cumin 
Sea salt to taste 
Over medium/low heat, melt oil in large skillet; add the potatoes, let sit without stirring for 
approximately 8 minutes. Stir in sausage slices, chopped onion and pepper, and mustard seed, let 
sit for 5-8 minutes before stirring.  Turn heat to low, stir in minced garlic, greens, and additional 
seasonings. Stir every 5 minutes until done (10-15 more minutes). This is a great recipe to double 
and make in advance; it is quick and easy to warm up. It can also be enhanced by serving with 
eggs; top with an over-medium egg and/or melted cheese along with fresh sliced tomatoes.

Produce Ordered.

We ordered quite the variety this round. Sweet Potatoes were voted for on the poll, but the price is still quite high. There is an AWESOME breakfast recipe that Natalie Warner has made for me with baby reds and Kale. I will put that recipe up. Although Gala's were voted for, the Fugi's were $6.00 cheaper for the same amount. Grapes would have cost $51.00. That's a little pricey for a co-op. ;o) Cabbage was a great price, and for those who think it's an Irish meal can cook it on St. Patty's day. ;o)
Please give me feedback when you get your baskets on what you would like ordered. Do you like variety and trying new things every now and then, or do you like to stay safe? This is your food, so I want to order what you want. It makes me nervous trying to please a whole group. Thanks! Shantell

Lots of changes

Since the co-op is so popular and awesome we have split the co-op into 3 separate co-ops. We're hoping that this will make it more convenient for everyone. South Foxboro has moved to Patti Cook and Luisa Hansen's co-op. Patti will contact you if she hasn't already.

 North Foxboro has 2 locations. The first 24 people who joined or who replaced someone who left in that original 24 will be staying with Shantell and Rebecca. The additional 24 who joined later will be going to Liz Thomas and Breanna Tagge's co-op. They will send out an email to let you know which house you will pick up your produce at. Their co-op will be on the odd Wednesday of the original co-op to accommodate to those who want a weekly basket. Because of the week change those who will be joining their co-op will have to wait an additional week to pick their basket up. I'm sorry for this. Also, if you think it would be more convenient to pick up your produce at one location than the other then please find someone in that co-op to switch with. There are just so many names to try and switch that we couldn't pick one over the other. After you find someone and decide on the switch please let us know and we'd be happy to do it. Thanks so much!!

Produce is ordered.

Again, prices are a little wild from the crazy weather in Mexico. I did my absolute best at getting everything we got for a good price. The following items were the best deal. I tried to get what the majority voted, but sometimes it's hard with price changes. They did not have any strawberries. :( They are selling a lot of those, and they are out. Bummer!

Fuji apples, pears, bananas, oranges, avocado, tomato, carrots, green leaf, cantelope, celery, onion, mushrooms, & kiwi.

Prices for produce are expected to be a little pricey until April. We are still getting a great deal, but compared to when we first started the co-op it has inflated.

Yummy Potato Recipes from Aly Pearson!

Sue's Golden Potato Soup

6 cups potato chunks
2 cups water
1 cup celery slices (optional)
1 cup carrot slices
1/2 cup onion chopped
2 tsp parsley
2 Chicken bouillon cubes
1 tsp salt and pepper

Simmer above for about 15-20 mins or until veggies are tender (there will not be a lot of water left)

Mix 3 cups milk with 4-6 Tbls flour, add to veggies and cook until thick. Add one pound of velveeta cheese chunked, stir until melted.



Park City Oven Stew (Great for a Sunday dinner)

2 1/2 lbs Stew meat
8 carrots chunked (baby carrots work wonderfully)
1 can cream of celery soup
1 can of cream of mushroom soup
8 med potatoes, cut up
1 pkg dried onion soup mix

Put stew meat in the bottom of a dutch oven or crock pot, then the veggies. Sprinkle with onion soup. Combine mushroom and celery soups (do not dilute with milk) and pour over stew. Cover and bake in the oven for 6-8 hours at 250 degrees or 6-8 hours on low in crock pot

Today.

Today's co-op was great! Jessica Williams who is in our co-op and a Utah blogger put very important information up about the increasing prices of produce. She will also be adding to her blog how to best store the produce to get the most out of it.
As a reminder the Blueberries were free, so if they are gross then that's just what they are. Free and gross. ;o) We try to divide out the produce as best as possible. If any produce is smashed or not great quality just know that we've done our best. When I put an order in I always pass on the information about the quality of all the food we got previously. They do the best they can.

Produce 2.16.11

Produce is ordered. Strawberries, Pears, Fuji Apples, Gala Apples, Oranges, Bananas, Kiwi, Seedless Green Grapes, Lemons, Cauliflower, mini carrots, Broccoli, 5 lb. Potatoes. And maybe blueberries.

Ordering was extremely difficult. I had to wipe the sweat away. ;o)
Prices for produce has completely skyrocketed! I only ordered things that are reasonably priced. If you are tired of Broccoli and Cauliflower I am so sorry. I'm aware we have got that a lot, but when those are the only veggies that go up a couple of dollars it's what I order. I am not exaggerating when I say that most vegetables have doubled. For example Green Leaf lettuce is usually 14.50, but today it was 29.50. CRAZY!!! As I was ordering he kept apologizing for the prices. It is all due to the abnormal weather. I personally feel really bad for the farmers. They are losing a lot of money :(

Okay. About the Blueberries. They usually cost 19.50 for 12 of them. He offered to sell them to me for $10.00 because some of them are bad. Um... I'm not willing to take that risk considering last time we bought them there were complaints. At the end of ordering everything he said "Well, I'll see what I can do about just throwing in the blueberries for free for you." :) Either we get them free or they continue to rot in his storage place. We will see what happens. Please don't expect fantastic and if they are then be happy, because you got the free! ;o)

Baskets may look smaller tomorrow as there are a lot more smaller items ordered.

What is everyone going to do with their lemons? Lemon Chicken maybe???

PLEASE READ.

So, the co-op has 42 people. That 36 I wanted to try jumped to 42 people. That's great. ;o) BUT, I can only order in increments of 12. That is how the produce comes. For example, when I order one box of cauliflower there is 12 in it.
So, I have to get 6 more people in order to provide for the extra 6 that want to try it. Does this make sense? I am doing my best to accommodate to every one who would like to try this out. If I don't get up to 48 by the weekend I will have to cut 6 people and put them on some kind of waiting list. If you can pass the information on to your neighbors and family that live close that would be fantastic. Let them know this is a one week trial and if they like it I'll do my best to get them a more permanent spot, and if they don't like it then it was great to have them for the one week trial. ;o)

Also, for those in the co-op. If you are going on vacation or will be out of town the day of pick up please contact me one week ahead to tell me. I had some people asking me what happens if they are unavailable for pick-up. I don't remember who you are. Sorry. There are too many people to remember all the needs. Please be patient with me. It is best to email me. That way I have it in my email and I'll write it down as soon as I get the email.

Yummy Ideas!

Hi! It's Rebecca Howard. Here's how I used some of the produce in my basket...

How I used my Broccoli:

1. Cut off the florets and put them into a microwaveable container (I use a gallon sized ziploc)
2. Put a couple pads of butter in
3. Sprinkle with salt, garlic, and other seasonings you like (I even put a little brown sugar in last time, and it was like candy for my kids!)
4. Microwave for 2-3 minutes
5. ENJOY! So yummy!

How I used my Cauliflower:

I've never liked cauliflower, but this was so delicious I was sad when it was gone. My kids gobbled it up, too. ONLY STEAM THE CAULIFLOWER FOR 8 MINUTES OR SO! I'm not sure why it says 30, but that would turn it into paste! We melted the butter with the mayo and mustard and coated the cauliflower with that, then sprinkled grated parm. cheese over the top. Also, you only have to bake it for about 15 minutes, then broil on low until the cheese is golden brown.



Cheesy Baked Cauliflower

"A delicious cheesy cauliflower dish."


1 head cauliflower
1/4 cup butter, cut into pieces
1 teaspoon mayonnaise
1 teaspoon prepared mustard
1/2 cup grated Parmesan cheese
Directions:
1. Steam whole head of cauliflower for 30 minutes. Drain and place on a pie plate.
2. Preheat oven to 375 degrees F (190 degrees C).
3. In a mixing bowl, combine mayonnaise and mustard; spread the mixture over cauliflower and dot with pats of butter. Sprinkle generously with Parmesan cheese.
4. Bake at 375 degrees F (190 degrees C) uncovered, for about 30 minutes, or until the cheese is brown.

How I used my Zucchini:

I made muffins instead of bread, and they made an excellent breakfast. Instead of the oil, I made them with white bean paste, so they were pretty much fat free! I also used whole wheat flour. You can also substitute raisins or craisins for the chocolate chips. If making muffins, only bake for about 20 minutes.


Zucchini Bread
(From allrecipes.com)

Ingredients:
3 cups all-purpose flour
3 eggs
2 cups white sugar
1 cup vegetable oil
2 cups grated zucchini
1 cup semisweet chocolate chips
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup sour cream
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9 x 5 inch loaf pans.
2. Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate. Pour batter into prepared pans.
3. Bake for 80 minutes. Cool on wire rack.

We currently have 24 people in our co-op, and we are trying to get up to 36 to see how it goes with that number of people. Recipe found by Julie Scott

"Hi Shantell!
I tried this recipe this week because I had onions, celery, and green peppers.  The family liked it.  I was also happy that it is a freezer meal.  I put half of it in the freezer for another meal." She found this recipe on sistercafe.blogspot.com

Chicken Enchiladas
½ c. green pepper (you can also use yellow pepper or a combo of both)
2 Tb butter
1 15-oz can tomato sauce
1 c. chicken stock (water and 1 tsp bouillon granules (or 1 cube) works great)
1-2 tsp chili powder
1 tsp each cumin, sugar, and salt
¼ tsp pepper
1/3 c. half and half (I used milk)
1 (8-oz) pkg cream cheese (I used 1/3 less fat)
3 c. cooked chicken, diced
¾ c. onion, chopped (can also add celery to complete the ¾ c.)
½ tsp salt
2 Tb butter
1 c. cheese
8-12 flour tortillas (I used 10)

Sauté onion and pepper in butter. Remove to a bowl and set aside. Heat tomato sauce, chicken stock, chili powder, cumin, sugar, salt and pepper; simmer 30 minutes. Meanwhile, prepare filling. Gradually add half and half to cream cheese. Stir in chicken, sautéed onion and bell pepper (and celery, if desired), and salt. Lightly brown tortillas on both sides in butter until heated, but not crisp. (I didn’t brown mine) Dip tortilla in tomato sauce mixture and spoon ¼ c. chicken filling into each tortilla. Roll up and place seam side down in a lightly greased 9x13 pan. Cover with remaining tomato sauce. Cover with foil. At this point you may freeze the pan. Otherwise, bake at 350° for 20 minutes. Remove foil and sprinkle with 1 cup cheese. Bake 5 more minutes.
(When baking a frozen pan of enchiladas, remove the pan from the freezer, leave one layer of foil on top, and place in the oven (no need to preheat). Set the oven to 350° and bake for about 40-45 minutes or so, or until it is hot in the middle. Then add cheese and bake until it is melted on top.)"

1.19.11

I think we had a great basket yesterday. Not sure what I'm going to do with all the cucumbers yet?? ;o) I thought I'd share some pictures that Jessica Williams took. Thanks Jessica!
Also, we will be doing the sorting a little differently going forward. I think less people sorting will be easier to manage. I will be rotating people so every one gets the opportunity to help. There always seems to be extra produce. It is divided up with those who help sort.
Payment for co-op and bread are to be made to me (Shantell Kaspar). The payment for the produce ($16.50) should always be paid ahead. Co-op has it's own bank account and there is no money floating around, so I need to make sure the check I make to the produce company clears.
Rebecca Howard will be contacting every one for their bread orders.
Voting will be up this weekend. I'm doing the absolute best that I can with this, so please be patient with me and my short comings.

Recipe with onions and green peppers.

We love this recipe in our home!

Crepes and Beef filling.

Crepes:
1 1/2 c. milk
3 eggs
3 Tbls. sugar
1 tsp. vanilla
1 tsp. salt
5 Tbls. butter
1 1/2 c. flour

Blend together in a blender.
To cook pour a small layer in a greased frying pan and flip when ready.

Beef filling:
1 can cream of mushroom soup
1/2 c. mayo
1 lb. ground beef
1 c. cooked rice
1/4 c. chopped onion
1/4 c. chopped green pepper
seasoning to taste.
Cook Onions and Green Peppers then add  meat and brown. Add rice, soup, and mayo. Mix all together until warm. Fill center of crepes. Roll up crepe and enjoy!

Chicken Chowder.

Don't know what to do with your carrots and celery? This recipe is always delicious!

CHICKEN CHOWDER:
3 Chicken Breasts
3/4 c. Diced Onion
3/4 c. Diced Celery
1 c. Diced Carrots
2 c. Peeled, cut potatoes
4 Chicken Bouillon cubes
1 Envelope Dry "Lipton Noodle Soup" Mix
12 oz. Can Evaporated Milk

Boil chicken in 7 cups water with chicken bouillon 20 minutes till cooked.
Cut chicken in pieces when cooked. Set aside.
Add veggies cook about 15 min.
Add soup mix and cook for 5 min.
Add chicken and milk.
Salt and pepper to taste.

Enjoy!

Basket 1/19/11

Produce has been ordered. The prices have inflated a little, so I only ordered things I could get a great deal on. Broccoli and Cauliflower is one of the items that have gone up.

Your basket will contain:
Apples, bananas, pears, blueberries, oranges, tomatoes, mini carrots, cucumber, green leaf lettuce, mushrooms, kiwi, bell pepper, onions, garlic, celery, & grapefruit!!!

Welcome to the new Foxboro Co-op blog. This blog is set up for reminders and a way to get everyone involved in the produce we get in our baskets! You will see there is a place to vote on the right. Please vote for whatever you'd like to see and I'll do my best to get it. I can not promise you that you'll see it. I only buy produce that is in season and a good price.
