Yummy Potato Recipes from Aly Pearson!

Sue's Golden Potato Soup

6 cups potato chunks
2 cups water
1 cup celery slices (optional)
1 cup carrot slices
1/2 cup onion chopped
2 tsp parsley
2 Chicken bouillon cubes
1 tsp salt and pepper

Simmer above for about 15-20 mins or until veggies are tender (there will not be a lot of water left)

Mix 3 cups milk with 4-6 Tbls flour, add to veggies and cook until thick. Add one pound of velveeta cheese chunked, stir until melted.



Park City Oven Stew (Great for a Sunday dinner)

2 1/2 lbs Stew meat
8 carrots chunked (baby carrots work wonderfully)
1 can cream of celery soup
1 can of cream of mushroom soup
8 med potatoes, cut up
1 pkg dried onion soup mix

Put stew meat in the bottom of a dutch oven or crock pot, then the veggies. Sprinkle with onion soup. Combine mushroom and celery soups (do not dilute with milk) and pour over stew. Cover and bake in the oven for 6-8 hours at 250 degrees or 6-8 hours on low in crock pot
