This recipe is SO GOOD!!! Natalie Warner made this for me and it is sooooo good! I just use regular oil. and turkey sausage. The Kale is DELICIOUS in this recipe.
Anyone have any really great ideas for the artichoke? It is a little frost bitten, okay a lot! I called this morning and complained and he said that it actually adds flavor. I need your feedback because if it is NO good then he will give us a refund and we can add it to the next order. Thanks!
Breakfast for Champions

2 Tablespoons coconut oil or ghee (clarified butter)
2 medium-size red skin potatoes, peeled and chopped
¼ cup chopped onion
¼-1/2 cup chopped red or green bell pepper
1 teaspoon brown or yellow mustard seeds
2-4 links organic turkey or chicken sausage, cut into round slices
4 large leaves of Kale, or chard (red or green), washed, de-stemmed, and chopped
2 garlic cloves, minced
½ teaspoon ground cumin
Sea salt to taste
Over medium/low heat, melt oil in large skillet; add the potatoes, let sit without stirring for
approximately 8 minutes. Stir in sausage slices, chopped onion and pepper, and mustard seed, let
sit for 5-8 minutes before stirring. Turn heat to low, stir in minced garlic, greens, and additional
seasonings. Stir every 5 minutes until done (10-15 more minutes). This is a great recipe to double
and make in advance; it is quick and easy to warm up. It can also be enhanced by serving with
eggs; top with an over-medium egg and/or melted cheese along with fresh sliced tomatoes.
